Grapefruit Mint Cooler via Sips and Spoonfuls

This refreshing drink, via Sips and Spoonfuls is cooling and perfect for this time of the year. From the humidity, heat, and long summer days, this drink is perfect for a refreshing cool-down. If you're celebrating Ramadhan, then this drink is great to break your fast with as well. It's cooling and reloads your vitamin intake, sugars, reboots your energy and quenches your thirst

Here's the recipe:

1 Grapefruit
1 Cup of Water
Sugar to taste (about just over 1/4 cup)
1 handful of mint leaves
Ice and extra mint leaves for garnish

Directions:
Boil the sugar, water and mint leaves until the sugar has just dissolved. Sieve out the mint leaves if desired (which is what I did) for a more subtle mint taste. Juice the grapefruit and add the juice and the sugar mixture into a blender. Blend until just incorporated.  Cool in the freezer before serving with ice cubes and mint leaves.
